Spicy Fried Eggs – Nicky’s Kitchen Sanctuary

Perfectly fried spicy eggs with chilli oil and crispy onions. A flavour-packed brunch when you fancy something a little bit different.

Nicky’s Notes

This recipe started out as a take on Turkish eggs, which I’ve adapted over time.

It’s really easy to throw together and it’s what I make when we’re craving something quick and spicy.

I love to dip toasted flatbreads or warmed pita into the runny eggs yolks and yogurt, then spoon on some of the salty-spicy spring onions and crispy onions.

What makes this so good:

  • Cooks in 6 minutes
  • You only need to chop a few spring onions (scallions) and a fresh chilli – minimal prep!
  • We eat it right out of the pan (both hovering over it with toasted flatbreads in hands). So it’s minimal washing up too!

  • I finish the dish off with chilli oil and chilli flakes, but you can of course swap out for chili crisp if you prefer.
  • Crispy onions are store-bought crispy onions (<– aff link) they come in a tub or bag and they’re the perfect topping for these eggs! You can buy them at most larger supermarkets and Asian supermarkets too.

Fry the eggs for 2 mins in oil, then add spring onions, garlic, chilli and white pepper. Cook for a minute, then, around the eggs, add a mix of soy & oyster sauce with a little water and stir. Add blobs of yogurt, warm for a minute, then top with crispy onions. Drizzle with chilli oil, sprinkle, chilli flakes and sesame seeds and serve with flatbreads.

Recipe Tips

  • Serve right out of the pan – yes this is a sharing pan! It looks prettier this way, and it’s less washing up!
  • Make this a one-person recipe in a smaller frying pan by halving all the ingredients (same cooking time ).

What to serve it with

I love to serve with toasted flatbreads or warmed pita. You can also serve it for lunch or dinner with some fried rice or crispy potatoes! A drizzle of sweet chilli sauce is a nice swap for the chilli oil if you like a bit of sweetness.


Watch how to make it

  • Heat the oil in a large frying pan (skillet) over a medium–high heat.

    2 tablespoons oil

  • When the oil is hot, carefully crack the eggs into the pan, so they’re evenly spaced, with a gap between each egg. Cook for 2 minutes until the whites are cooked at the edges, but not quite done near the yolk.

    4 medium eggs

  • Reduce the heat to medium. Scatter the spring onions garlic, chilli and white pepper in the spaces between the eggs and use a spatula to move them around a little for 1 minute.

    4 spring onions (scallions), 2 garlic cloves, 1 red chilli, ¼ teaspoon white pepper

  • Mix together the soy sauce, oyster sauce and 2 tablespoons of water. Pour over the spring onions and stir the sauce into the spring onions.

    1 tablespoon light soy sauce, 2 tablespoons oyster sauce

  • Add four blobs of yogurt into the pan and swirl into the spring onions slightly, but don’t mix it in completely. We want four separate areas of yogurt.

    4 tablespoons thick natural yogurt

  • Cook for another minute until the yogurt is slightly warmed through (it doesn’t need to be hot), the spring onions are tender and the egg whites are cooked (the yolks should still be runny).

  • Turn off the heat and sprinkle on the crispy onions.

    3 tablespoons crispy fried onions

  • Serve the eggs topped with a drizzle of chilli oil and a sprinkling of chilli flakes and sesame seeds. You can eat them on their own, or serve over rice, or with flatbreads for dipping in the eggs and yogurt.

    1 tablespoon chilli oil, ½ teaspoon chilli flakes, 1 tablespoon sesame seeds, toasted flatbreads

Tip – Crispy Onions You can buy crispy fried onions in little tubs at most supermarkets. They’re usually with the salad dressings/toppers and/or the world food section.
